La Palais Royal, LLC D/B/A Pastis has a peakload need for workers in this temporary Server Assistant position from November 25th, 2026. through May 15th, 2027. Server Assistants will be responsible for assisting with clearing and resetting tables, stocking and maintaining dining and service areas, handling dishes and tableware, stacking soiled plates and glasses in the dish room, maintaining cleanliness standards, responding to guest requests, and supporting servers to ensure service standards and positive guest interactions. Located in the heart of West Palm Beach, Pastis serves as a prime location offering guests easy access to the areas beaches, shopping, and local attractions. Pastis is designed to operate as an upscale Parisian-style brasserie, which will serve as the signature restaurant within the anticipated Nora Hotel, both opening in October 2026. The Restaurant will provide crowd favourites such as Onion Soup, Escargots, a variety of meat entrees, as well as raw bar platters and baskets of bread. Since the restaurant is scheduled to open in the Fall of 2026, the requested period of employment coincides with its initial winter operating season, when business projections indicate the highest level of customer demand. As a newly established restaurant, Pastis does not yet have historical operating data. Accordingly, its staffing projections are based on detailed business forecasts, projected restaurant covers, anticipated revenues, reservations, planned private events, and seasonal tourism trends in the West Palm Beach market. The restaurant will maintain a core workforce of permanent employees responsible for the year-round operation of the business. However, during the requested period of employment, the restaurant anticipates significantly increased customer demand that will exceed the capacity of its regular workforce. These projections are based on anticipated restaurant covers, forecasted revenue, reservations, private dining activity, weddings, corporate functions, and seasonal tourism in West Palm Beach during the requested period of employment. Given the location and the elite service, the restaurant has the capacity to host weddings, corporate meetings, group dinners, welcome receptions, restaurant buyouts, press/media parties, and other special events. (Please note the calendar of scheduled events submitted with the application were for the Petitioner, Pastis, which is located within the Noral Hotel. The events listed are events such as weddings, dinners, holiday parties, corporate events, happy hours, brunches, etc. All these events will be utilizing the Petitioner to provide food, drinks, and serve as a location to host the events.) With such a highly anticipated opening, the restaurant expects to see a significant rise in demand from late-November through mid-May. Temporary workers in the Server Assistant position are therefore necessary to support operations during this high-demand period. Following the conclusion of the winter tourism season, typically from late May through mid-November, customer demand is expected to decline as tourism decreases and seasonal visitors leave the area. During this period, projected business levels return to those that can be handled by the employer's permanent workforce. As a result, the employer will no longer have sufficient work to justify retaining the temporary Server Assistant employees.
